Start the Vegetables
Place carrots in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until slightly tender, 5-7 minutes.Carefully remove from microwave.In one provided tray, combine microwaved carrots, diced peppers (if you receive a whole bell pepper, cut into 1/2" dice), 2 tsp. olive oil, and a pinch of pepper.Bake uncovered in hot oven, 10 minutes.While vegetables bake, continue recipe. -
Prepare Chicken and Add Corn
In a mixing bowl, combine cheese and crispy onions.
Pat chicken dry and season both sides with 1/4 tsp. salt and a pinch of pepper.Place chicken in second provided tray. Evenly top with mayonnaise, then cheese mixture, pressing gently to adhere.After 10 minutes, carefully remove tray from oven. Stir corn, barbecue seasoning (to taste), butter, and 1/4 tsp. salt into vegetables until combined. -
Bake the Meal
Bake both trays uncovered in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.To serve, top chicken with dressing. Bon appétit!
