Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

Prepare the Ingredients
Stem and mince cilantro.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Quarter potatoes. If larger than a ping-pong ball, cut into six to eight wedges.Place potatoes on one prepared baking sheet and toss with 1 Tbsp. olive oil, fiesta seasoning, 1/2 tsp. salt, and 1/4 tsp. pepper. Spread into a single layer. -
Prepare the Meatloaves and Vegetables
In a mixing bowl, combine ground turkey, panko, white portions of green onions, fajita seasoning, and 1/2 tsp. salt. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height.
Place meatloaves on one half of second prepared baking sheet. Place pepper and onion mix on empty side of sheet and toss with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer on their side. -
Roast the Potatoes, Vegetables, and Meatloaves
Roast both sheets in hot oven until potatoes are crispy, vegetables are tender, and meatloaves reach a minimum internal temperature of 165 degrees, 20-25 minutes.
Carefully remove both sheets from oven. Toss potatoes with cilantro. Sheet will be hot! Use a utensil.Top meatloaves evenly with salsa (use less if spice-averse), then cheese. Sheet will be hot! Use caution. -
Top the Meatloaves
Roast vegetables and meatloaves again in hot oven (no need to continue roasting potatoes) until cheese melts, 3-4 minutes.
Carefully remove from oven. Top meatloaves with roasted vegetables. Sheet will be hot! Use a utensil. -
Finish the Dish
Plate dish as pictured on front of card, topping meatloaf with green portions of green onions. Bon appétit!
