To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Place a large non stick pan over medium high heat. Add 2 tsp olive oil. Add cooked diced potatoes to hot pan and stir occasionally till golden brown and warmed through, 7-8 min.     Place a medium non stick pan with ½ c water over medium low heat. Add cream cheese and stir till dissolved, 2-4 min. Break up gouda into small pieces and add slowly while stirring continuously until all the cheese is added, 2-3 min. Stir continuously till cheese is dissolved. 2-3 min. Season with a pinch of pepper and remove from heat.

    Place potato pan over medium high heat, no need to wipe clean. Add 1 tsp oil. Separate steak strips into a single layer and pat dry. Add sliced steak, demi glace and 1 Tbsp water to hot pan and stir continuously till no pink remains and internal temperature reaches 145, 4-6 min. Remove from heat and season with a pinch of salt and pepper.

    Thinly slice green onion and tomato. Add green onion, brewpub mustard sauce to potatoes and stir to combine. Build the steak sandwich like the photo, topping the steak with cheese sauce, tomato slices, and baby arugula.
