Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

cook the potatoes
Cut potatoes into ¼" fries and pat dry. Place fries on prepared baking sheet and toss with 1 Tbsp. olive oil, seasoning blend, ¼ tsp. salt, and a pinch of pepper pepper. Massage seasoning into potatoes. Spread into a single layer and bake in hot oven until lightly browned, 25-28 minutes, tossing fries halfway through.
While potatoes cook, prepare ingredients.

Cut tomatoes into ¼" strips.
Halve and peel onion. Slice halves into thin strips.
Season ground beef with a pinch of salt and pepper. Form into 2 patties,

Place 2 tsp. olive oil in a medium pan over medium heat.
Add onion to hot pan and stir occasionally until browned, 10-13 minutes. Add sugar and cooking wine to pan.
Simmer, stirring occasionally, until wine is almost entirely cooked off.
If pan becomes dry, add water 1 Tbsp. at a time.
Remove from burner.
toast buns and cook burgers
Place a large non-stick pan over medium heat and add 1 tsp. olive oil. Add buns to hot pan, cut side down. Cook until toasted, 1-2 minutes. Transfer buns to a plate and keep pan over medium heat. Add patties to hot pan and cook until browned and patties reach a minimum internal temperature of 160 degrees, 4-6 minutes per side, covering pan after flipping patties. Remove from burner. Top burgers with blue cheese and cover pan until cheese is melted, 1-2 minutes.
