These tacos make a fun and easy-to-prepare meal that kicks up the heat! Tender ground beef is simmered in a mildly spicy sauce with black beans and sautéed bell peppers, and is served with cool, crumbled queso fresco and diced green onion.

You Will Need
Prepare the Ingredients
Thoroughly rinse produce and pat dry. Rinse and drain the black beans. Chop onion, setting aside ¼ cup. Slice red bell pepper into long thin strips. Dice green onion. Heat a medium pan over medium heat. Add 1 Tbsp. olive oil, then add bell pepper and sauté until soft, about 5 minutes. Remove from pan and reserve.
Cook the Beef
Using the same pan, add beef and cook over medium heat until it begins to brown, about 3-4 minutes. Use a wooden spoon to break beef up into small pieces as it cooks. Add chopped onion and cook for 2 minutes. Then add taco seasoning, salsa, and black beans. Stir together and cook for another 2 minutes.
Assemble the Tacos
Crumble the queso fresco. Assemble 2-3 tacos per person. Scoop a generous amount of beef and black bean mixture onto tortillas and top with sautéed bell peppers, crumbled queso fresco, and green onion.
