Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Trim and thinly slice green onions on an angle, keeping white and green portions separate.
Core tomato and cut into 1/2" dicein bowl combine tomatoes, green onion tops, basil pesto, 1/4 tsp salt and 2 tsp olive oil. mix well
Pat chicken breasts dry, and season both sides with poultry seasoning.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add chicken breasts to hot pan, and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side. Remove chicken to a plate and tent with foil. Remove from burner.allow to rest for 2 mminutes and dice into 1/2" cubes.
Place tortillas on a clean work surface. Divide half the cheese between tortillas, then top with chicken , green onion bottoms, half of the bruschetta mixture and remaining cheese. Fold tortilla over filling and press gently so it holds in place.
Return pan used to cook chicken to medium heat and add 1 Tbsp olive oil to hot pan. Place quesadillas in pan (there should be no overlap). Cook until golden brown, 2-3 minutes per side. Repeat with remaining quesadillas if working in batches.
Top quesadillas with cream fraiche and remaining bruschetta mixture. Bon appetite!
