To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  1. 1

    Start the Sweet Potatoes

Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry. Prepare a casserole dish with cooking spray. For best results, use a 9x13".

Peel sweet potatoes and slice into 1/4"-thick rounds.

Shingle sweet potato rounds in prepared casserole dish. Season with 1/4 tsp. salt and top with 2 Tbsp. water.

Cover tightly with foil. Bake covered in hot oven until slightly tender, 30-32 minutes.

While sweet potatoes bake, continue recipe.

  2. 2

    Make the Syrup

Bring a small pot with brown sugar, maple syrup, orange juice, ancho cinnamon rub (to taste), and 1/4 tsp. salt to a boil over medium heat.

Once boiling, reduce to a simmer. Stir occasionally until slightly thickened, 4-6 minutes.

Remove from burner. Stir in butter until melted and combined.

  3. 3

    Finish the Sweet Potatoes

Carefully remove sweet potatoes from oven. Uncover and pour syrup over sweet potatoes.

Cover again with foil. Bake again covered in hot oven, 30 minutes.

For a glazed top, baste potatoes with syrup from bottom of dish by carefully tilting dish and using a spoon or turkey baster to collect and pour again over the top. Repeat every 10 minutes. Dish will be hot; use oven mitts!

Remove from oven. Rest, 5 minutes.

Plate dish as pictured on front of card, topping with goat cheese (crumbling if needed). Bon appétit!
