Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Preheat oven to 400 degrees. Remove lid and label, if necessary. When ingredient appears in recipe, remove from packaging. Thoroughly rinse any fresh produce and pat dry.
Season chicken with a pinch of salt and pepper
Cut broccoli into bite-sized pieces
Place broccoli on prepared baking sheet.
Toss with 2 tsp. olive oil, ½ tsp. salt, and a pinch of pepper and spread into a single layer.
Roast in hot oven until browned and fork-tender, 16-18 minutes.

Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add chicken breasts to hot pan, and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side. Remove chicken to a plate and tent with foil. Remove from burner.
Reserve pan; no need to wipe clean.
sauce and plating
add demi, cherry jam and 2 Tbsp of water to hot pan.
stir and allow to simmer until slightly thick, 1 minute.
stir in butter and a pinch of salt.
