Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    "Heat a large pot over medium-high heat. Add 1 tsp. olive oil and Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes." Transfer to a plate. While sausage cooks, prep veggies....

    halve bell pepper, stem and seed. Cut into 1" dice. mince garlic combine flour with ½ c water, stir to thoroughly combined mince chipotle in adobo, save adobo for later. drain white beans and rinse with cold water.

    No need to wipe out pot used to cook sausage. Place pot over medium high heat and add 1 tsp oil. Add peppers and garlic, season with¼ tsp salt and pinch of pepper. Stir occasionally till peppers release their juices and get tender, 2-3 min. Add *crushed tomatoes, chipotle in adobo, white beans and 3 c water and stir continuously scraping the bottom of the pan to loosen the caramelized bits. Bring to a simmer. Stir flour water mixture, and add to chili stirring continuously till thickened, 2-3 min.

    Add cooked sausage and drippings back to pot and stir to combine. Season with ½ tsp salt. Turn heat down to medium low and cook till chili thickens, stirring occasionally, 8-10 min.

    Remove chili from heat and stir in smoky bbq sauce. Bowl up chili and top with sour cream and shredded cheddar cheese. Bon Appetit!
