1 Cook the Chicken
Pat chicken breasts dry. Season chicken with a pinch of pepper. Combine cornstarch with 1 tsp. water in a mixing bowl. Brush tops of chicken with cornstarch mixture, then top with panko, pressing gently to adhere. Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add chicken breasts to hot pan, panko-side down first, and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side. Remove from burner. Transfer chicken to a plate. While chicken cooks, prepare the ingredients.

2 Prepare the Ingredients
Coarsely chop spinach. Trim and thinly slice green onions, keeping white and green portions separate. Combine sour cream, lemon juice, seasoning blend, and green portions of green onions in another mixing bowl. Set aside.

3 Make the Potatoes
Place another medium non-stick pan over medium heat and add 1 tsp. olive oil. Add spinach, ¼ tsp. salt, and a pinch of pepper to hot pan and stir often until wilted, 1-2 minutes. CHECK TIMING Add mashed potatoes to pan and stir occasionally until warmed through, 2-3 minutes. CHECK TIMING Remove from burner.

4 Finish the Dish
