Roast The Potatoes
Halve potatoes lengthwise. Toss fingerling potatoes with 2 tsp. olive oil, ¼ tsp salt and a pinch of pepper on prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 18-20 minutes.
While potatoes roast, prepare the ingredients.

Cut broccoli into bite size pieces.

Prepare The Chicken
Cover chicken breasts with plastic wrap and use a heavy object to pound to an even 1/8" thickness. Top evenly with ranch seasoning, mayo, and panko.
Place a medium non-stick pan over medium-high heat and add 2 tablespoons olive oil. Add chicken to hot pan and cook undisturbed until browned, 2-3 minutes. Lower heat to medium. Flip chicken, and cook until chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes.
Roast The Broccoli
Add broccoli to baking sheet and toss with 1 tsp olive oil and a pinch of salt and pepper. Roast in a hot oven until browned and tender, 12-14 minutes.
Finish The Dish
Add butter and hot sauce (to taste) to a small bowl until completely combined.
