Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare the Ingredients
Preheat oven to 425 degrees Thoroughly rinse any fresh produce and pat dry.
Mix cauliflower, tomatoes, 2 tsp. olive oil, ¼ tsp. salt, and a pinch of pepper in provided tray until completely combined. Spread into a single layer.
Bake uncovered in hot oven, 8 minutes.
Add the Pork Chops
Carefully remove tray from oven. Push vegetables to one side. Tray will be hot! Use a utensil.
Pat pork chops dry, and season both sides with ¼ tsp. salt and a pinch of pepper.
Place pork chops in empty space in tray. Top evenly with goat cheese (breaking up with hands if needed) and panko.
Finish the Dish
Bake uncovered in hot oven until cauliflower is tender and pork reaches a minimum internal temperature of 145 degrees, 15-18 minutes.
Carefully remove tray from oven. Garnish cauliflower with pesto and Parmesan. Bon appétit!
