Tender chicken breasts are drenched in a sweet-and-spiced sauce of honey, curry, and a little ginger, and served atop fluffy quinoa (which soaks up the sauce perfectly) and crisp buttered green beans. You Will Need

    Cook the Chicken

    Preheat the oven to 350 degrees and prepare a baking sheet. Rinse chicken breasts and pat dry. Season each side of chicken breasts with a pinch of salt and pepper. Heat ½ Tbsp. olive oil in a medium pan over high heat. Sear each side of chicken breasts for 3 minutes. Then place the seared chicken in the prepared baking dish and bake for 15 minutes, or until internal temperature reaches 165 degrees.

    Prepare the Quinoa

    Bring a small pot with quinoa and ⅔ cup of water to a boil. Reduce to a simmer, cooking for 15 minutes, or until all of the liquid has been absorbed, and the quinoa is fluffy. Fluff with a fork and salt and pepper to taste.Set aside.

    Prepare the Sauce

    Melt 1 Tbsp. butter (reserving the rest) in a small pan. Whisk in honey, 1 cup of water, bouillon cube, curry powder (reserving a pinch), and ground ginger (reserving a pinch) until bouillon cube is fully dissolved. Bring to a steady simmer. The sauce will get foamy as it reduces: after about 5-7 minutes, the sauce will be thicker and darker. Taste, adding a few more pinches of curry and ginger, if desired. Salt and pepper to taste. Set aside.

    Prepare the Green Beans

    Bring a small pot with water to a boil. Rinse and chop the ends off green beans. Boil the green beans for 4 minutes, or until al dente and bright green. Top with remaining 1 Tbsp. of butter and salt and pepper to taste.

    Plate the Dish

    Scoop the quinoa onto two plates. Arrange green beans over the quinoa. Place the chicken breasts over the beans. Pour the honey ginger sauce over the chicken breasts. Finish with a crack of fresh black pepper.
