Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Cook Broccoli

    Cut broccoli into bite-sized pieces, if necessary. Place broccoli on prepared baking sheet. Toss with tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper and spread into a single layer. Roast in hot oven until browned and fork-tender, 14-16 minutes.

    Cook Couscous

    "Once water is boiling, add couscous to pot. Remove from burner, cover, and set aside, 10 minutes.

    After 10 minutes, remove cover, fluff couscous with 1 TB olive oil and chimichurri sauce. Set aside covered."

    Cook Chicken

    Pat chicken breasts dry, and season both sides with 1/4 tsp salt and a pinch of pepper. " Place a medium non-stick pan over medium-high heat.

    Add 1 tsp. olive oil and chicken to hot pan and cook until browned, 2-3 minutes per side.

    Transfer chicken to prepared baking sheet with broccoli.

    Make Sauce

    In the same pan over low heat, add apricot preserves, 1 tsp olive oil and 1 TB water. Whisk to combine. Bring to a simmer.
