This peanut chicken is a new take on chicken satay, the popular appetizer. This is a crowd-pleasing dish with tender chicken, served with linguine drown in a creamy peanut butter sauce with a kick of spice. Crisp simply seasoned green beans complete the meal.

Recipe Steps

    Prep the Chicken

    Heat your oven to 350F. Chop the garlic. In a small bowl, combine the garlic, soy sauce (reserving 1 Tbsp. for later use), and the juice from the lemon. Add chicken to the bowl, coat entirely and let sit for 1 minute.

    Cook the Chicken

    Heat 1 Tbsp. olive oil in a skillet over high heat. Sear the chicken for 3 minutes on each side. Then add the chicken to the baking dish with the sauce, and bake in the oven for 10 minutes. Flip the chicken and bake for another 10 minutes. Cut in to center of chicken to ensure doneness.

    Cook the Linguine

    Bring a pot of water to a boil. Once the water is boiling, add the pasta. The pasta may stick out of the water at first, but after a minute or so you should be able to push the linguine into the pot. Cook the linguine for 7-8 minutes, until al dente and then drain.

    Cook the Green Beans

    Fill a small pot with water, and bring to a boil. Chop the ends off the green beans. Boil the green beans for 4 minutes, or until al dente. Drain, and then top with ½ Tsp. olive oil and a sprinkle of salt.

    Make the Sauce

    While the linguine is cooking, prepare the sauce. In a saucepan, whisk the flour and peanut butter together over low heat. Once warm, whisk in the cream, 2 Tbsp. water, 1 Tbsp. soy sauce, and sugar. Very slowly bring the mixture to a slow bubble. Let bubble, while whisking constantly for 2-3 minutes, allowing the sauce to thicken. Then add the red pepper flakes and salt and pepper to taste. Add a few Tbsp. water to sauce, if too thick.

    Plate the Dish

    Scoop a generous amount of pasta onto each plate. Add a chicken breast, and spoon the peanut sauce over the chicken and pasta. Serve the green beans on the side.
