Before You Cook

    Cook The Potatoes

    Halve potatoes lengthwise. Toss fingerling potatoes with 1 tsp. olive oil and a pinch of salt and pepper on prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 18-20 minutes. Transfer to a mixing bowl and toss with butter and chives. While potatoes cook, prepare the ingredients

    Prepare The Ingredients and Cook The Steak

    Mince chives Mincs garlic Trim bottom end from broccolini and cut into ¾" length on an angle. Pat steaks dry, and season both sides with a pinch of salt and coarse black pepper. Place a medium nonstick pan over medium-high heat. Add 1 tsp. olive oil and steaks to hot pan. Sear undisturbed until browned, 2-3 minutes. Transfer steaks to prepared baking sheet. Roast until steaks reach a minimum internal temperature of 145 degrees, 10-12 minutes. Rest cooked steaks at least 3 minutes." Reserve pan; no need to wipe clean.

    Cook The Broccolini

    Season broccolini with a pinch of salt and pepper. In the same pan, add 1 tsp olive oil and broccolini and stir occasionally until tender, 5-7 minutes.

    Make The Sauce

    In a medium nonstick pan over medium heat, add 1 tsp olive oil. Add garlic and cook 1 minute. Add light cream and a pinch of salt and pepper and bring to a boil. Remove from heat and stir in horseradish sauce.
