Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Cook The Rice
"Bring a small pot with rice and 1½ cups water to a boil.
Reduce to a simmer, cover, and cook until rice is tender, 18-20 minutes.
Remove from burner and stir in black beans, corn, and garlic salt. Set aside.
While rice cooks, prepare the plantains.
Prepare The Plantains
Add canola oil to a large nonstick pan over medium heat. While canola oil heats, add tempura, 3 tablespoons water, and a pinch of salt and pepper to a mixing bowl and stir until a thick batter forms, like a pancake batter. _If too thick, add additional cold water, 1 tsp. at a time, until the consistency is reached. Add plantains and toss to coat.
Test oil temperature by adding a pinch of batter to it. It should sizzle gently. If it browns immediately, turn heat down and let oil cool. If it doesn't brown, increase heat.
Fry The Plantains
"Line a plate with a paper towel.
Working in batches, carefully place plnatains in hot oil and cook until golden brown, 2-4 minutes per side.
Remove to towel-lined plate and season with a pinch of salt.
Make The Sauce
In a small pan over medium heat, add garlic, 1 tablespoon water, and jerk sauce and bring to a simmer. Cook 1-2 minutes.
