Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Roast The Potatoes and Garlic Bread
Cut each potato into 1" dice. Place potatoes on prepared baking sheet and toss with 1 tsp. olive oil and a pinch of salt and pepper. Push to one side and roast in hot oven until potatoes are tender and browned, 22-25 minutes.
Spread butter and minced garlic evenly on bread. Add to empty side of tray and roast until browned, 5-7 minutes.
While potatoes roast, prepare the ingredients.
Prepare The Ingredients
Peel and halve shallot. Slice thinly.
Cook The Salmon
Pat salmon fillets dry.
"Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add salmon, skin side up, to hot pan and sear until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side."
remove to a plate and remove skin. gently flake into large chunks.
Cook The Vegetables
In a large pot over medium-high heat, add 1 tsp olive oil, carrot blend, shallot, and a pinch of salt and pepper. Cook, stirring occasionally, until slightly tender, 4-5 minutes.
Add cream, seasoning blend, and ¾ cup water and bring to a simmer.
Remove from heat and stir in flaked salmon and potatoes.
