seed and mince jalapeno
dice tomato into ¼ inch pieces
slice green onions, separate
rough chop crispy jalapenos
drain and rinse mandarin oranges
medium non stick, 1 t oil, medium heat
add corn, jalapeno and white from green onions, sear 2 minutes, stir, cook 1 minute
remove from heat and place in a bowl with tomatoes, mandarin oranges, 1T lime juice and a pinch of salt
same non stick, medium high heat 1 T oil, sear shrimp for 2-3 miuntes, flip, season with pinch of salt and pepper
