Prepare The Ingredients
Trim ends off green beans
Halve potatoes lengthwise
Roast The Potatoes and Green Beans
Toss fingerling potatoes with 2 tsp. olive oil and half the seasoning blend on prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 18-20 minutes, rotating pan halfway through.
Toss green beans with 1 tsp olive oil and remaining seasoning blend. Halfway through the potato cooking time, add green beans to the pan and roast.
Cook The Steaks
Pat steaks dry, and season both sides with ¼ tsp salt and a pinch of pepper.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add steaks to hot pan, and cook until browned and steaks reach a minimum internal temperature of 145 degrees, 5-7 minutes per side.
Reserve pan; wipe clean.
Make The Sauce
In the same pan over medium heat, add bacon and cook until slightly crispy, 2-3 minutes.
Add demi and 1 tablespoon water. Bring to a simmer and remove from heat.
Finish The Dish
