Before You Cook

Cook the Chicken
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add chicken to hot pan. Stir occasionally until lightly browned, 3-4 minutes.
Stir in seasoning.
Chicken will finish cooking in a later step.
While chicken cooks, prepare ingredients.
Prepare the Ingredients
Separate leaves of lettuce for cups.
Drain black beans in a wire-mesh strainer and rinse.
Combine half the garlic (reserve remaining for chicken), half the Parmesan (reserve remaining for garnish), mayonnaise, vinegar, 1 tsp. water, and a pinch of salt and pepper in a mixing bowl. Set aside.
Finish the Chicken
Stir in black beans, corn, and remaining garlic to pan with chicken. Stir occasionally until chicken reaches a minimum internal temperature of 165 degrees, 3-4 minutes.
Finish the Dish
Plate dish as pictured on front of card, filling lettuce cups with chicken mixture, dressing, remaining Parmesan, and tortilla strips.
