Place rice, sofrito sauce, fajita mix, 1 cup of water and seasoned salt blend in the pan. Stir to combine.
Top with salmon and season with 1/4 tsp salt and a pinch of pepper.Roast uncovered in a hot oven until rice is tender and the salmon has reached a minimum internal temperature of 145 degrees, 22-24 minutes.Top salmon with BBQ sauce, hot sauce (to taste) and tortilla strips.
