To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

    Assemble The Dish

    Place rice, sofrito sauce, fajita mix, 1 cup of water and seasoned salt blend in the pan. Stir to combine. Top with salmon and season with ¼ tsp salt and a pinch of pepper. Roast uncovered in a hot oven until rice is tender and the salmon has reached a minimum internal temperature of 145 degrees, 22-24 minutes. Top salmon with BBQ sauce, hot sauce (to taste) and tortilla strips.
