    Cut broccoli into bite-sized pieces Cut each potato into six to eight wedges. Zest and halve lemon. Cut one half into wedges and juice the other half. Finely chop capers Pat tilapia dry, and season both sides with ¼ tsp salt and pinch of pepper

    "Place tilapia on prepared baking sheet with 1 tsp. olive oil. Bake in hot oven until fish reach a minimum internal temperature of 145 degrees, 12-14 minutes." Allow to cool till warm to the touch, 10-15 min. While tilapia bakes, prepare potatoes.... Place potatoes on prepared baking sheet and toss with 1 tsp. olive oil and ½ pink seasoned salt. Spread into a single layer and roast in hot oven until potatoes are tender and browned, 22-25 minutes.

    In a mixing bowl, Add seasoned mashed potatoes, ¼ tsp lemon zest, 1 tsp lemon juice, and half the chopped capers. Mix thoroughly to combine, add panko. Break up cooked tilapia into small pieces and add to potato mixture. Mix till thoroughly combined and season with ¼ tsp salt and pinch of pepper. Form tilapia mixture into four evenly-sized fish cakes, about 3" in diameter. Gently sprinkle flour onto each side of fish cakes and press to coat the outside.     Place broccoli on prepared baking sheet. Toss with 1 tsp olive oil half pink seasoned salt and spread into a single layer. Roast in hot oven until browned and fork-tender, 14-16 minutes. While veggies cook, fry fish cakes... Place a large non-stick pan over medium heat and add 1 tsp. olive oil. Add fish cakes to hot pan. If necessary, cook in batches to avoid crowding pan. Cook until browned and warm throughout, 3-4 minutes per side. season warm cakes with a pinch of salt.

    "Place a small non-stick pan over medium-low heat. Add half the butter and stir occasionally until butter smells ""nutty,"" turns golden, and brown flecks appear, 4-6 minutes. " Remove from heat and add remaining butter, and stir continuously until melted. Add remaining chopped capers and 1 tsp lemon juice. Season with a pinch of salt and pepper and stir to combine.
