There's something classic about turkey tetrazzini; yes, we know, it's a staple of 10,001 frozen dinners. But those frozen food companies were up to something when they chose it: turkey, mushrooms, peas, and sauce all jumbled together fulfills some deep need of comfort and familiarity. Nothing fancy, nothing out of the ordinary, but flavors and warmth that make this tetrazzini extraordinary.

You Will Need
Large Non-Stick Pan
Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Cook the Pasta
Once water is boiling, add pasta and cook until al dente, 12-13 minutes.
Reserve 3/4 cup pasta cooking water. Drain pasta in a colander and set aside.While pasta boils, prepare ingredients.
Prepare the Ingredients
Cut mushrooms into 1/4" slices.
Mince garlic.If using Italian sausage, remove from casing on a separate cutting board.
Cook the Turkey and Mushrooms
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add ground turkey to hot pan and break up with a spoon until lightly browned, 2-3 minutes.If using Italian sausage, cook, breaking into small pieces with a spoon, until no pink remains, 4-6 minutes.Add mushrooms, garlic, and a pinch of salt. Stir occasionally until lightly browned, 2-3 minutes.Add reserved pasta cooking water and chicken base and cook until mushrooms are tender, 2-3 minutes.
Make the Sauce
Add cream and pasta and bring to a boil. Once boiling, stir often until slightly thickened, 2-3 minutes.
Stir in cheese, peas, 1/4 tsp. salt, and a pinch of pepper until peas are warmed through, 1 minute.
Finish the Dish
Plate dish as pictured on front of card, garnishing with crispy onions. Bon appétit!
