2 Cook the Vegetables
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add green beans and 1/4 tsp. salt to hot pan. Cook, 1 minute. After 1 minute, add 1/4 cup water. Stir to combine and bring to a simmer.Once simmering, cover and cook until tender, 4-5 minutes. If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.Uncover and add 2 tsp. olive oil, microwaved potatoes, 1/4 tsp. salt, and a pinch of pepper. Reserve bowl and set aside. Stir occasionally until vegetables are slightly browned, 2-3 minutes.Remove from burner.
