To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using diced chicken thighs, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

1 Start the Meal
Place mashed potatoes and a pinch of salt in one provided tray. Vigorously stir to combine and spread into a single layer.
Pat chicken dry.Place chicken in second provided tray. Toss with 2 tsp. olive oil, blackening seasoning, and 1/4 tsp. salt. Spread into a single layer.Bake both trays uncovered in hot oven until mashed potatoes are heated through and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove from oven and drain any excess liquid. Trays will be hot! Use caution.Let chicken cool, at least 5 minutes.While chicken cools, continue recipe. -
2 Heat the Corn
Place corn, bacon, butter, ranch seasoning, and a pinch of salt in a microwave-safe bowl. Cover with a damp paper towel.
Microwave covered until corn is heated through, 2-3 minutes.Carefully remove from microwave and stir to combine. Set aside. -
3 Shred Chicken and Finish Meal
After 5 minutes, or once chicken is cool enough to handle, shred into small pieces, using two forks. Add BBQ sauce and stir to combine. Spread into an even layer.
Add softened cream cheese to mashed potatoes and vigorously stir to combine. Spread into an even layer.To serve, top mashed potatoes with chicken. Garnish with shredded cheese and dressing. Bon appétit!
