To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Start the Peppers and Meatballs
Spray both provided trays with cooking spray.
In a mixing bowl, combine panko and 1 Tbsp. water. Let sit, 1 minute.After 1 minute, add ground beef, 1/2 tsp. salt, fiesta seasoning, and a pinch of pepper to bowl. Stir until thoroughly combined. Form mixture into 16 equally-sized meatballs.Evenly divide mixed peppers and meatballs between both trays. Cover trays with foil.Bake covered in hot oven, 10 minutes.Meatballs will finish cooking in a later step.Carefully remove from oven. Uncover trays and drain any excess liquid. Trays will be hot! Use caution. -
2 Finish the Peppers and Meatballs
Drain and rinse beans in a colander/strainer.
Evenly divide beans, tomato sauce, tomatoes, chipotle seasoning (use less if spice-averse), 1/2 tsp. salt, and vegetable base between both trays. Kids not a fan of extra heat? Feel free to skip/reduce the chipotle seasoning. Stir until combined. Trays will be hot! Use a utensil.Bake uncovered in hot oven until meatballs reach a minimum internal temperature of 160 degrees, 13-15 minutes.Carefully remove from oven.While peppers and meatballs bake, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.To serve, top rice with peppers and meatballs (to taste). Garnish with sour cream and tortilla strips. Bon appétit!
