Cover with a damp paper towel.Microwave covered until slightly tender, 8-10 minutes.Carefully remove from microwave and drain any excess liquid. While potatoes microwave, in a mixing bowl, combine mayonnaise and onion jam. Set aside.Pat steak strips dry. Coarsely chop, then separate pieces. Season all over with 1/3 the potato spice seasoning (reserve remaining for potatoes) and a pinch of salt and pepper. -
2 Cook the Potatoes
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add potatoes to hot pan. Stir often until potatoes are tender and lightly browned, 8-10 minutes.Remove from burner. Stir in remaining potato spice seasoning, a pinch of salt and pepper, and grated cheese until combined. While potatoes cook, continue recipe. -
3 Toast the Buns
Place another large non-stick pan over medium heat.
Add buns, cut-side down, to hot, dry pan. Toast until browned, 1-2 minutes.Transfer buns to a plate.Wipe pan clean and keep over medium-high heat. Pan will be hot! Use caution. -
