Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

1 Make the Filling
Spray provided trays with cooking spray.
Drain and rinse beans.Carefully massage rice in bag to break up any clumps. Remove rice from packaging.In a microwave-safe bowl, combine 2 Tbsp. water, piri piri seasoning (to taste), beans, rice, corn, and garlic salt. Microwave uncovered until warmed through, 3-4 minutes.Remove from microwave. Stir in half the salsa (to taste; reserve remaining for topping) until combined. -
2 Assemble the Enchiladas
Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.
If tortillas come folded, keep folded.Place tortillas on a clean work surface. Divide filling evenly between tortillas. Tuck tortilla end under filling and roll, placing seam side down in prepared trays. -
3 Bake the Meal
Top trays evenly with enchilada sauce. Cover trays with foil.
Bake both trays covered in hot oven, 20 minutes.Carefully remove trays from oven and uncover. Top trays evenly with cheese.Bake both trays again uncovered in hot oven until cheese is melted, 5-8 minutes.Carefully remove trays from oven.To serve, garnish with sour cream and remaining salsa (to taste). Bon appétit!
