Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Rice Mixture
Drain and rinse beans in a colander/strainer.
Carefully massage rice in bag to break up any clumps and remove from packaging.In provided tray, combine rice, beans, corn, and citrus mojo rub. Spread into a single layer.Bake uncovered in hot oven, 10 minutes.While rice mixture bakes, continue recipe. -
2 Add the Brisket
Drain brisket, separate slices, and pat dry. Season all over with taco seasoning (use less if spice-averse).
After 10 minutes, carefully remove tray from oven. Push rice mixture to one side of tray. Tray will be hot! Use a utensil.Place brisket in now-empty side of tray. Add enchilada sauce (use less if spice-averse) to brisket and stir until coated. -
3 Finish the Meal
Bake again uncovered in hot oven until rice and brisket are heated through, 10-15 minutes.
Carefully remove tray from oven.While meal bakes, stem cilantro, keeping leaves whole.Cut lime into wedges.To serve, top rice with brisket. Garnish with cheese, and cilantro. Squeeze lime wedges over to taste. Bon appétit!
