1 Cook the Potatoes
Prick potatoes all over with a fork. Place on a microwave-safe plate. Microwave uncovered until tender, 6-7 minutes.
Carefully remove from microwave. Using the flat side of an object (like a drinking glass), press down gently to smash each potato until 1/2" thick. Season all over with taco seasoning and 1/4 tsp. salt. Potatoes will be hot! Use caution.Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add potatoes to hot pan and cook until browned and crisp around edges, 4-5 minutes per side, working in batches if necessary.Remove from burner. While potatoes cook, continue recipe. -
2 Crisp Bacon and Toast Buns
Line a plate with a paper towel. Evenly spread bacon on towel-lined plate and microwave until crisp, 1-2 minutes.
While bacon crisps, place another large non-stick pan over medium-high heat and add 1 tsp. olive oil.Add buns, cut-side down, to hot pan and cook until toasted, 1-2 minutes.Remove from burner. Transfer to a plate. Reserve pan; no need to wipe clean. -
3 Cook the Ground Beef Mixture
Return pan used to toast buns to medium-high heat.
Add ground beef, chile and cumin rub, and 1/2 tsp. salt to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Add salsa (to taste) and stir occasionally until combined, 2-3 minutes.Remove from burner. -
