To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Vegetables
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until tender, 5-7 minutes.While potatoes microwave, trim green beans, if necessary.In one provided tray, combine potatoes, seasoned salt, green beans, 1 Tbsp. olive oil, and 1/4 tsp. pepper.Bake uncovered in hot oven, 10 minutes.While vegetables bake, continue recipe. -
2 Add Salmon and Top Vegetables
Finely crush crackers.
Pat salmon dry and place, skin-side down, in second provided tray. Season flesh side with 1/4 tsp. salt and 1/4 tsp. pepper. Top salmon evenly with mayonnaise, then cheese and crushed crackers, pressing gently to adhere.After 10 minutes, carefully remove vegetable tray from oven. Evenly top vegetables with bacon. -
3 Finish the Meal
Bake both trays uncovered in hot oven until vegetables are tender and salmon reaches a minimum internal temperature of 145 degrees, 15-20 minutes.
Carefully remove trays from oven.To serve, garnish with sour cream. Bon appétit!
