Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Cook the Chicken Mixture
Pat chicken dry and season all over with 1/4 tsp. salt and 1/4 tsp. pepper.
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add chicken and mixed peppers to hot pan. Stir occasionally until peppers are tender and chicken reaches a minimum internal temperature of 165 degrees, 7-9 minutes.Add salsa (to taste), corn, and half the taco seasoning (reserve remaining for beans). Kids not a fan of extra heat? Feel free to skip/reduce the salsa. Stir often until combined and corn is heated through, 1-2 minutes.Remove from burner.While chicken mixture cooks, continue recipe. -
2 Make the Refried Beans
Drain and rinse beans in a colander/strainer.
Place a medium pot over medium heat. Add beans, cream cheese, 1/4 cup water, remaining taco seasoning, and a pinch of salt and pepper to hot pot. Stir to combine and bring to a simmer.Once simmering, stir often until beans are heated through, 3-5 minutes.Remove from burner. Let cool, 5 minutes.Once cool enough to handle, mash beans until slightly chunky. Beans will be hot! Use caution. Set aside and cover to keep warm.While beans cook, continue recipe. -
3 Heat the Rice
Carefully massage rice in bag to break up any clumps and remove from packaging.
In a microwave-safe bowl, combine rice and a pinch of salt.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in 1 tsp. olive oil, piri piri seasoning (to taste), and 1/4 tsp. salt until combined. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning. Fluff rice with a fork. -
4 Assemble Burritos and Finish Dish
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.
Microwave until heated through, 30-60 seconds.Carefully remove from microwave and transfer to a clean, flat work surface.Evenly distribute refried beans, chicken mixture (to taste), then cheese among tortillas, placing in center. Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly.Plate dish as pictured on front of card, halving burrito, if desired. Bon appétit!
