If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare the Ingredients
In one provided tray, combine corn, half the cream cheese (reserve remaining for mashed potatoes), 2 Tbsp. water, and savory seasoning. Cover tightly with foil. Have a little sous chef around? With supervision, have them help prepare the corn.
In a mixing bowl, combine pesto (to taste), BBQ sauce, and jam. Set aside. Kids not a fan of extra heat? Feel free to skip/reduce the pesto.Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper. Place chicken in second provided tray and evenly top with half the BBQ-pesto mixture (use less if spice-averse; reserve remaining for garnish). -
2 Bake the Meal
Bake both trays (corn covered, chicken uncovered) in hot oven until corn is heated through and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.While meal bakes, continue recipe. -
3 Heat Mashed Potatoes and Finish Meal
In a microwave-safe bowl, combine mashed potatoes, onion salt, and remaining cream cheese. Vigorously stir to combine.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove mashed potatoes from microwave. Vigorously stir to combine.Carefully remove both trays from oven. Uncover corn and stir to combine. Tray will be hot! Use a utensil.To serve, top chicken with remaining BBQ-pesto mixture (to taste; using a new utensil). Bon appétit!
