Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F
Customize It Instructions

If using ground turkey, break up in a medium non-stick pan over medium heat with 1 tsp. olive oil until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare the Filling
Drain and rinse beans in a colander/stainer.
Evenly divide beans between both provided trays.Break up ground beef and evenly divide between trays. Spread into an even layer. Evenly divide taco seasoning between both trays.Bake both trays uncovered in hot oven until beef reaches a minimum internal temperature of 160 degrees, 17-20 minutes.Carefully remove from oven. Drain any excess liquid, if needed, and transfer beef mixture to a mixing bowl. Wipe trays clean and spray with cooking spray. Set aside. Trays will be hot! Use caution.Add tomatoes to beef mixture and stir to combine. -
2 Assemble the Enchiladas
Place tortillas on a clean, flat work surface.
Evenly divide half the cheese (reserve remaining for topping) between tortillas, placing on one half. Top cheese with filling. Fold tortilla over filling, then roll tortilla. Place seam-side down in reserved trays. Repeat with remaining tortillas.Evenly top each tray with 1 tsp. olive oil.Evenly top one tray with enchilada sauce and half the remaining cheese (reserve remaining for second tray).Evenly top second tray with salsa (to taste) and remaining cheese. Cover trays with foil. -
3 Bake Enchiladas and Finish Meal
Bake both trays covered in hot oven until cheese is melted and sauces are bubbling, 10-15 minutes.
Carefully remove from oven.To serve, top enchiladas with sour cream. Bon appétit!
