Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Vegetables

    In a mixing bowl, combine zucchini, mayonnaise, potato spice seasoning, 1/2 tsp. salt, and a pinch of pepper. Mix until zucchini is evenly coated.

    Add panko and mix to thoroughly combine. Panko may not stick to zucchini directly.

    Roast the Zucchini

    Transfer zucchini to prepared baking sheets and spread into an even layer.

    Top with 4 tsp. olive oil and a 1/4 tsp. salt.

    Roast in hot oven until zucchini is evenly browned and panko is golden, 10-15 minutes.

    Carefully remove sheets from oven.

    Add Cheeses and Finish Dish

    Top zucchini with Parmesan and mozzarella.

    Bake again in hot oven until cheese has melted and browned, 5-8 minutes.

    Carefully remove from oven.
