1 Prepare the Ingredients
Core tomatoes and cut into 1/4" dice.
Hold romaine heart at root end and finely chop.In a mixing bowl, combine shredded cheese, softened cream cheese, 1/3 the dressing (reserve remaining for garnish), and 2 Tbsp. water. Set aside. Kids want to help? With supervision, have them help prepare the cheese mixture. -

Add taco seasoning and half the tomatoes (reserve remaining for garnish) to hot pan. Stir occasionally until combined and tomatoes are slightly softened, 2-3 minutes.
Remove from burner. -
4 Assemble the Tacos
Place tortillas on a clean, flat work surface.
Poke tortillas with a fork all over on both sides, 10 times for each tortilla. Evenly top with 2 tsp. olive oil and massage oil into tortillas.Divide cheese mixture evenly between tortillas, placing on one half. Top cheese mixture with filling. Fold tortillas over filling, pressing gently to adhere.Place tacos on prepared baking sheets. -
