Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, follow same instructions.

    Cook Pasta and Prepare Ingredients

    Once water is boiling, add pasta to hot pot and cook until al dente, 8-10 minutes.

    Remove from burner. Reserve 1 cup pasta cooking water. Drain pasta in a colander/strainer.

    While pasta cooks, trim bottom end from broccolini and cut into 1" lengths.

    Mince garlic.

    Pat chicken dry. Cover with plastic wrap and use a heavy object to pound to an even 1/2" thickness. Gallon bags make clean up easier and are made of thicker plastic. If you don’t have a disposable bag, use plastic wrap.

    Season both sides with half the garlic salt (reserve remaining for broccolini), and a pinch of salt and pepper. Evenly top one side of chicken with mayonnaise, then panko, pressing gently to adhere.

    Cook the Chicken

    Place a large non-stick pan over medium-high heat and add 2 Tbsp. olive oil.

    Add chicken to hot pan. Cook undisturbed until browned on one side, 2-3 minutes.

    Lower heat to medium. Flip chicken, and cook until chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes.

    Transfer chicken to prepared baking sheet. Wipe pan clean and reserve.

    While chicken cooks, continue recipe.

    Cook the Broccolini

    Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add broccolini, a pinch of salt, and remaining garlic salt to hot pan. Stir occasionally until slightly browned and tender, 8-10 minutes.

    Remove from burner.

    Cook Sauce and Add Pasta

    Return pan used to cook chicken to medium heat.

    Add marinara, tomato sauce, pesto, garlic, 1/2 cup reserved pasta cooking water, and a pinch of salt and pepper. Stir occasionally until combined and slightly thickened, 2-3 minutes.

    If too thick, add remaining pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.

    Add pasta and stir occasionally until coated and heated through, 1-2 minutes.

    Remove from burner.

    Broil Chicken and Finish Dish

    Evenly top chicken with cheese.

    Broil under hot broiler until cheese is melted, 2-3 minutes.

    Don't text and broil! Keep an eye on oven as chicken may burn easily under broiler.

    Carefully remove from broiler.
