If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Prepare Ingredients and Make Sauce
Cut potatoes into 1" pieces. Place potatoes in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until tender, 8-10 minutes.While potatoes microwave, in a mixing bowl, combine mustard (to taste) and aioli. Get the kids involved! With supervision, have them help prepare the sauce. Set aside.Place panko on a plate and spread into an even layer.Pat pork chops dry. Season both sides with 1/2 tsp. salt and a pinch of pepper. Top both sides evenly with mayonnaise.Place pork onto panko and flip until coated on both sides, pressing gently to adhere. -
2 Toast the Buns
Spray cut-sides of buns with cooking spray.
Place a large non-stick pan over medium heat.Add buns, cut-side down, to hot pan. Toast until lightly browned, 1-2 minutes.Transfer buns to another plate. Keep pan over medium heat. -
3 Cook the Pork Chops
Line another plate with a paper towel.
Add 2 Tbsp. olive oil to hot pan.Lay pork away from you in hot oil and flip every 1-2 minutes until golden-brown and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner. Remove from burner. Rest, 3 minutes.While pork cooks, continue recipe. -
4 Finish Potatoes and Finish Dish
Place another large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add microwaved potatoes and piri piri seasoning (to taste) to hot pan. Kids not a fan of extra heat? Feel free to skip the piri piri seasoning. Stir occasionally until browned all over, 8-10 minutes.Remove from burner.Cut pork chops into evenly-sized strips.Plate dish as pictured on front of card, topping bottom bun with pork, sauce, arugula, and top bun. Garnish potatoes with dressing. Alternatively, serve dressing on the side for dipping, if desired. Bon appétit!
