1 Prepare the Ingredients
Halve and peel onion. Cut halves into 1/4" slices.
Remove stem, seeds, and ribs, and cut bell peppers into 1/2" dice. -
2 Cook the Filling
Remove Italian sausage from casing, if necessary.
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add Italian sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Add bell peppers, onions, minced garlic and parsley, and a pinch of pepper. Stir occasionally until vegetables are tender, 4-5 minutes.Stir in half the marinara (reserve remaining for sauce) until filling is coated.Remove from burner. Transfer to a plate and set aside. Wipe pan clean and reserve. -
3 Assemble and Broil the Flautas
Place tortillas on a clean work surface.
Divide mozzarella evenly between tortillas, placing on one half. Top mozzarella with filling. Fold tortilla over filling, then roll tortilla. Place seam-side down. Repeat with remaining tortillas.Place flautas on prepared baking sheet and top with 1 Tbsp. olive oil. Broil under hot broiler until tortillas are browned and crisp, 1-3 minutes.Don't text and broil! Keep an eye on oven as tortillas may burn easily under broiler.Carefully remove from broiler. -
4 Heat Sauce and Finish Dish
Return pan used to cook filling to medium heat. Add remaining marinara and 1 Tbsp. water to hot pan. Bring to a simmer.
Once simmering, remove from burner.Plate dish as pictured on front of card, topping flautas with marinara sauce and Parmesan. Bon appétit!
