If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

1 Start Vegetables and Form Meatballs
Spray both provided trays with cooking spray.
Place sweet potatoes in one prepared tray and toss with 2 tsp. olive oil. Spread into an even layer.Bake uncovered in hot oven, 15 minutes.While sweet potatoes bake, in a mixing bowl, combine panko, mayonnaise, ground turkey, fajita seasoning, 1/2 tsp. salt, and a pinch of pepper. Form meat mixture into 12 equally-sized meatballs. To create snowman figure, divide meat mixture into 4 equally-sized portions. Using 1 portion, form 1 large, 1 medium, and 1 small meatball. Gently push them together in tray with largest on bottom and smallest on top. -
2 Finish the Vegetables and Meatballs
After 15 minutes, carefully remove tray from oven. Add 2 tsp. olive oil, pepper and onion mix, 1/4 tsp. salt, a pinch of pepper, and fiesta seasoning to tray with sweet potatoes. Stir to combine. Tray will be hot! Use a utensil.
Place meatballs in second prepared tray.Bake both trays uncovered in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 165 degrees, 22-25 minutes. Carefully remove from oven.While vegetables and meatballs bake, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging.
In a microwave-safe bowl, combine rice, corn, and 1/4 tsp. salt. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in chimichurri (to taste) until combined and fluff rice with a fork. Kids not a fan of extra heat? Feel free to skip/reduce the chimichurri.To serve, top rice with vegetables and meatballs. Garnish rice with cheese and top meatballs with chipotle crema. Bon appétit!
