Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Cook Orzo and Prepare Ingredients
Once water is boiling, add orzo and cook until al dente, 4-5 minutes.
Remove from burner. Reserve 1/2 cup orzo cooking water. Drain orzo in a colander/strainer and set aside. Wipe pot clean and reserve.While orzo cooks, trim ends off celery and cut into 1/4" dice.Remove stems, seeds, and ribs, and cut green and red bell pepper into 1/4" dice. Alternatively, reserve half the raw bell peppers for snacking/serving on the side.Trim and thinly slice green onions on an angle, keeping white and green portions separate. -
2 Cook the Vegetables
Return pot used to cook orzo to medium-high heat and add 2 tsp. olive oil.
Add bell peppers, celery, 1/4 tsp. salt, and a pinch of pepper to hot pot. Stir occasionally until vegetables are tender, 6-8 minutes.Add 1 tsp. olive oil and white portions of green onions. Stir often until green onions are fragrant, 2-3 minutes. -
3 Add the Sausage
Add Italian sausage to hot pot. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.
Drain any excess liquid from pot. Pot will be hot! Use caution. -
4 Add the Cream and Orzo
Add tomatoes, blackening seasoning, cream base, and a pinch of salt and pepper to hot pot. Stir to combine and bring to a simmer.
Once simmering, add orzo. Stir often until combined and orzo is heated through, 3-4 minutes.If too thick, add reserved orzo cooking water, 1 Tbsp. at a time, until desired consistency is reached.Remove from burner.While orzo cooks, continue recipe. -
5 Make Crema and Finish Dish
In a mixing bowl, combine sour cream and hot sauce (to taste). Kids not a fan of extra heat? Feel free to skip/reduce the hot sauce.
Plate dish as pictured on front of card, topping orzo with crema (to taste). Garnish with green portions of green onions and crispy onions. Bon appétit!
