Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

  1. 1

    Cook the Rice

Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.

Bring a medium pot with rice, 1 1/4 cups water, and half the piri piri seasoning (use less if spice-averse; remaining is yours to use as you please!) to a boil.

Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.

Remove from burner. Stir in 1 Tbsp. softened butter and a pinch of salt until combined. Set aside and cover to keep warm.

    While rice cooks, continue recipe.

  2. 2

    Prepare the Ingredients

Drain and rinse beans in a colander/strainer.

Pat chicken dry and season all over with fiesta seasoning. Don't worry about trimming. Excess fat will render while cooking and add flavor.

  3. 3

    Cook the Chicken

Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.

Add chicken to hot pan. Stir occasionally until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes.

  4. 4

    Add the Beans and Salsa

Kids not a fan of extra heat? Feel free to skip/reduce the salsa.

Add beans, salsa (to taste), and 1/4 tsp. salt to hot pan. Stir often until combined and beans are heated through, 2-3 minutes.

    Remove from burner.

  5. 5

    Assemble Burritos and Finish Dish

Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.

Microwave until heated through, 20-30 seconds.

Carefully remove from microwave and transfer tortillas to a clean, flat work surface.

Evenly divide chicken mixture (to taste), cheese, and spring mix among tortillas, placing in center. Fold sides of tortilla toward center, then roll bottom edge towards the top, enclosing sides tightly.

Plate dish as pictured on front of card, halving burrito, if desired. Bon appétit!
