Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. 

  • If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

  • If using Italian sausage, remove from casing, if necessary. Break up sausage until no pink remains and sausage reaches minimum internal temperature, 4-6 minutes. 

  • If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

  • Add protein to meal as desired.

    Prepare Ingredients and Make Green Goddess Sauce

    Trim woody ends off asparagus and cut into 1” lengths.

    Tear spinach into smaller pieces.

    Trim and thinly slice green onions, keeping white and green portions separate.

    In a mixing bowl, combine sour cream, pesto, and 1/4 tsp. salt. Set aside.

    Par-Cook the Asparagus

    Place asparagus in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until slightly tender, 1-2 minutes.

    Carefully remove from microwave.

    Start the Risotto

    Place another medium pot over medium-high heat and add 1 Tbsp. olive oil.

    Add rice and white portions of green onions to hot pot. Stir occasionally until rice is toasted and opaque, 1-2 minutes.

    Add 1 cup boiling water from other medium pot and mirepoix base to pot with rice. Rice should just be covered by water. Stir often until nearly all water is absorbed.

    Finish the Risotto

    Add 1/2 cup boiling water from medium pot and stir often again until nearly all water is absorbed. Repeat this process, stirring often, 18-20 minutes.

    Taste risotto as you cook, checking for tenderness. When rice has no more “bite” or crunch, it's done. There may be water left.

    Stir in spinach and microwaved asparagus until combined and spinach has wilted, 2-3 minutes.

    Stir in peas, cheese, butter, 1/4 tsp. salt, garlic salt, and a pinch of pepper until combined and peas are warmed through, 1-2 minutes.

    Remove from burner.

    Finish the Dish

    Plate dish as pictured on front of card, topping risotto with green goddess sauce and green portions of green onions. Bon appétit!
