Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Add the Pork
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Evenly divide pork, peppers, 2/3 the taco seasoning (reserve remaining for rice), and a pinch of salt between both provided trays.Cover trays with foil. -
2 Start the Pork
Bake covered in hot oven until pork reaches a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, drain beans.Carefully remove trays from oven.Stir pork mixture, breaking up pork into smaller pieces. Tray will be hot! Use a utensil. Evenly divide tomato sauce and beans between both trays. -
3 Finish Pork and Heat Rice
Bake again uncovered in hot oven until sauce is hot and simmering, 10-15 minutes.
While meal bakes, in a microwave-safe bowl, combine rice, 2 cups water, 1/4 tsp. salt, and remaining taco seasoning. Leave at least 3” of room on top to prevent overboil.Microwave uncovered, 5 minutes.Carefully remove rice from microwave and stir. Microwave again uncovered, 3 minutes.Carefully remove rice from microwave and trays from oven. Fluff rice with a fork and stir pork mixture until combined. Tray will be hot! Use a utensil.To serve, top rice with pork mixture and garnish with cheese, sour cream, salsa (to taste), and tortilla strips. Bon appétit!
