To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Potatoes
Place potatoes and 1 Tbsp. water in a microwave-safe bowl. (If some potatoes are larger than a ping pong ball, cut in half). Cover with a damp paper towel.
Microwave covered until tender, 4-6 minutes.Carefully remove from microwave and transfer potatoes to a clean, flat work surface. Potatoes will be hot! Use caution.Using the flat side of an object, press down gently to smash each potato until 1/2" thick.Place potatoes and leeks in provided tray. Toss with 2 tsp. olive oil, garlic salt, and a pinch of pepper. -
2 Prepare Chicken and Bake Meal
Pat chicken dry. Season both sides with rotisserie chicken seasoning, Italian seasoning, 1/4 tsp. salt, and a pinch of pepper.
Place chicken in second provided tray and evenly top with 2 tsp. olive oil.Bake both trays uncovered in hot oven until potatoes are browned and chicken reaches a minimum internal temperature of 165 degrees, 18-22 minutes.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven. Stir spinach and softened butter into potatoes until combined. Tray will be hot! Use a utensil.While meal bakes, continue recipe. -
3 Make Sauce and Finish Meal
In another microwave-safe bowl, combine cream base, cream cheese, and chimichurri seasoning. Cover with a paper towel.
Microwave covered until cream cheese is melted, 30-60 seconds.Carefully remove from microwave and stir to combine.To serve, top chicken with sauce. Bon appétit!
