If using shrimp, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

1 Prepare the Ingredients
Pat chicken dry. Season all over with garlic salt and a pinch of pepper.
Place chicken in one provided tray. Spread into an even layer and evenly top with 2 tsp. olive oil.Combine peppers and zucchini in second provided tray and toss with piri piri seasoning (to taste), 1/4 tsp. salt, and 2 tsp. olive oil. Spread into an even layer. -
2 Bake the Vegetables and Chicken
Bake both trays uncovered in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.
Carefully remove from oven and drain any excess liquid from chicken tray. Tray will be hot! Use caution.Stir chimichurri (to taste) into chicken until combined. Tray will be hot! Use a utensil.While vegetables and chicken bake, continue recipe. -
3 Heat Couscous, Make Crema, and Finish Meal
In a microwave-safe bowl, combine couscous, 2 Tbsp. water, and 1/4 tsp. salt. Cover with a damp paper towel.
Microwave covered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in a pinch of salt and softened butter until combined.While couscous microwaves, in a mixing bowl, combine creme fraiche, lemon juice, 1 Tbsp. water, and half the buttermilk-dill seasoning (remaining is yours to use as you please!).To serve, top chicken with crema and garnish vegetables with cheese.
