If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Broccoli
Place broccoli, 1/4 tsp. salt, a pinch of pepper, and 1 Tbsp. olive oil in one provided tray. Massage oil and seasonings into broccoli. Spread into an even layer. Have a little sous chef around? With supervision, have them help season and massage the broccoli.
Bake uncovered in hot oven, 10 minutes.While broccoli bakes, continue recipe. -
2 Prepare Chicken and Bake Meal
Pat chicken dry.
Combine chicken, 2 tsp. olive oil, 1/4 tsp. salt, a pinch of pepper, half the chimichurri seasoning (reserve remaining for rice), and lemon n herb seasoning in second provided tray. Spread into an even layer.After 10 minutes, carefully remove broccoli from oven. Stir and cover tray with foil. Tray will be hot! Use a utensil.Bake both trays (chicken uncovered, broccoli covered) in hot oven until broccoli is tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove trays from oven. Uncover broccoli and stir in pesto (to taste) until combined. Tray will be hot! Use a utensil. Kids not a fan of extra heat? Feel free to skip/reduce the pesto.While meal bakes, continue recipe. -
3 Heat Rice and Make Crema
Carefully massage rice in bag to break up any clumps and remove from packaging.
In a microwave-safe bowl, combine rice, chicken base, and remaining chimichurri seasoning. Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.While rice microwaves, in a mixing bowl, combine creme fraiche, dressing, and a pinch of salt and pepper. Set aside. Kids want to help? With supervision, have them help prepare the crema.To serve, top chicken with crema. Garnish broccoli with cheese. Bon appétit!
