1 Bake the Puff Pastry
Remove puff pastry from refrigerator. Remove any paper between puff pastry squares, if necessary. If paper is sticking, place puff pastry in freezer until firm, 5 minutes.
Place puff pastry on prepared baking sheet. Using the tip of a knife, gently draw a 1/2" border on top of pastry. Do not cut all the way through pastry.Bake in hot oven until golden-brown, 8-10 minutes.Carefully remove from oven and gently press center of pastry down. Pastry will be hot! Use a utensil. While puff pastry bakes, continue recipe. -
2 Prepare the Ingredients
Trim cucumber and cut into 1/4" dice.
Core tomato and cut into 1/2" dice. -
3 Start the Pizza Puffs
Evenly top center of puff pastry with half the grated cheese (reserve remaining for salad), then sausage, breaking into bite-sized pieces. Sheet will be hot! Use caution.
Bake in hot oven until sausage reaches a minimum internal temperature of 160 degrees, 15-18 minutes.Carefully remove from oven. -
4 Finish the Pizza Puffs
In a mixing bowl, combine tomato sauce and Italian seasoning.
Evenly top sausage with tomato sauce mixture, then shredded cheese.Bake again in hot oven until cheese is melted, 3-4 minutes.Carefully remove from oven. While pizza puffs bake, continue recipe. -
5 Assemble Salad and Finish Dish
In another mixing bowl, combine spring mix, tomatoes, cucumbers, dressing, and remaining grated cheese. Make dinnertime fun! With supervision, have your kid(s) help assemble the salad.
