If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

If using ground turkey, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 20-25 minutes.

1 Prepare the Ingredients
Place potatoes in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until tender, 6-8 minutes.If you receive potatoes larger than 2”, they may need an extra 1-2 minutes in the microwave to soften. Carefully remove potatoes from microwave and transfer to a clean, flat work surface. Potatoes will be hot! Use caution.Using the flat side of an object, press down gently to smash each potato until 1/2" thick.While potatoes microwave, in a mixing bowl, combine ground pork, bacon, cheese, rotisserie chicken seasoning, 1/4 tsp. salt, and a pinch of pepper. Form meat mixture into four equally-sized, oval-shaped loaves, about 4" in length and 1" by height. -
2 Bake the Potatoes and Loaves
Place potatoes in one provided tray and toss with 1 Tbsp. olive oil, potato spice seasoning, and a pinch of pepper. Spread into an even layer.
Place meatloaves in second provided tray and evenly top with 1/3 the ketchup (reserve remaining for sauce). Bake both trays uncovered in hot oven until potatoes are browned and meatloaves reach a minimum internal temperature of 160 degrees, 25-30 minutes.Carefully remove trays from oven and drain any excess liquid. Trays will be hot! Use caution.While potatoes and loaves bake, continue recipe. -
3 Toast Rolls, Make Sauce, and Finish Meal
Toast rolls, as desired.
Alternatively, place rolls directly on oven rack, cut-side up. Toast in hot oven until lightly browned, 3-4 minutes.While rolls toast, in another mixing bowl, combine remaining ketchup, mustard (to taste), and mayonnaise.To serve, top bottom roll with sauce, meatloaf, pickles, spring mix, then top roll.
